Go behind the scenes at Merriman's Restaurant, one of the innovators of Hawaii's regional cuisine. On this unique culinary guided tour, you'll visit two farms in the South Kohala district of the Big Island. This small group epicurean adventure culminates with a dinner featuring fresh ingredients from the farms visited earlier in the day.

First, you'll visit Honopua Farm, where owners Ken and Roen Hufford offer a personal tour and samplings from the farm. This family-run farm is renowned for its organic vegetables, lavender and cut flowers. Continue to Kahua Ranch at the 3,000-foot (915 meters) elevation in the Kohala Mountains, on the same lands where many years earlier, King Kamehameha trained his warriors to conquer the island chain. Today, these historic Kohala grasslands are home to one of the most respected range-fed sheep and cattle ranches in Hawaii. This is a beautiful spot with breathtaking coastal views.

Return to award-winning Merriman's Restaurant in Waimea for a special four-course dinner prepared by world-class chefs highlighting the products and produce from the farms visited. The knowledgeable and professional servers will offer insight into the creative interpretation for the evening's menu and assist with choosing wines from Merriman's award-winning cellar. A culinary learning adventure for all the senses!

Sample Menu (subject to change):

Salad:

Honopua Farm Spinach and Roast Beet Salad with Maui onions, warm macadamia nut, pear vinegar and ginger dressing

Fish Course:
Grilled Fresh Big Island Mahi Mahi with lemon and sorrel pesto baste, Nakano Farms vineripe tomato and olive salsa and jasmine rice

Meat Course:

See the best of old Hawaii and view several major volcanoes along with spectacular landscapes on this full-day helicopter and hiking tour. Fly for 1.5 hours with an expert pilot over the landmarks of the Big Island and Volcano National Park, including Kilauea, before landing in North Kohala to explore on foot. Your interpretive guide shares the history of the area during an easy hike past farms and the birthplace of kings. You'll gain an appreciation for the natural beauty of Hawaii from the ground and air on this comprehensive helicopter flight and hiking tour, including a picnic lunch and round-trip hotel transport.

Make your own way to Kona International Airport to board your deluxe Bell 407 helicopter. Hear informative commentary from your expert pilot via the two-way radio communications system, and feel free to ask any questions that you may have during your 1.5-hour aerial tour.
En route to Volcanoes National Park, your pilot takes you over the world-famous Kona coffee growing region and past two of Hawaii’s more impressive volcanoes: Mauna Kea and Mauna Loa. Then see Kilauea, the national park’s most famous volcano, and keep your eyes peeled as your pilot seeks out hot lava and new volcanic activity, often only viewable by helicopter.
Next, soak in the island’s wild natural beauty as you buzz over emerald valleys where waterfalls cascade down sheer walls, then over to the coast where waves break on rocky cliffs and remote beaches. After these breathtaking views of the island from the air, your pilot lands in North Kohala.
Your Hawaii Forest and Trail interpretive guide meets you upon landing and takes you onto private property to see old Hawaii. Walk at a relaxed pace over foot bridges and past historic taro terraces while your local guide shares the history of the Kohala District. Learn about King Kamehameha I, who was born here in 1758, and how he united the Hawaiian Islands into one royal kingdom in 1810, after years of conflict.

Stop at a waterfall where you can take a refreshing swim. Then continue your hike to the town of Hawi, once the hub of the island’s sugar industry. Hawi is now known for artist galleries, which you have time to browse while in town.

Expect to walk about 2 miles (3 km) at a leisurely pace, with walking staff, rain gear, towel and daypack provided. Enjoy a deli-style picnic lunch (ham, turkey or tuna sandwich with a side of fruit and vegetables plus desert) accompanied by assorted beverages, and return to Kona Airport by helicopter after your hike.

See the breathtaking landscapes of the Big Island of Hawaii like a VIP on this unforgettable helicopter tour from Kona. Home to some of the most biologically diverse and dramatic natural features on the planet (volcanoes, beaches, rainforest, lava fields, waterfalls… need we go on?), the Big Island was made for helicopter tours, and this one is particularly wonderful, as it includes a Champagne toast, is perfectly timed with the sunset and is a whopping two hours long. Circle the whole island, from the Hamakua Coast to Kilauea, enjoying the amazing aerial views. This exclusive Viator experience can’t be booked anywhere else!

After hotel pickup, head to the Kona airport to begin your VIP helicopter tour over the Big Island. When you arrive, enjoy a traditional lei greeting and glass of Champagne to mark the occasion. Then board your comfortable Bell 407 helicopter and take off, heading north to fly over the secluded beaches and lava fields along the Kona, Kohala and Hamakua coasts. Throughout the tour, listen to commentary from your pilot, who you can communicate with via your two-way headset.

Next, fly to the far side of the Kohala Mountains to look down on a series of lush hidden valleys, and then cruise down to Hawaii Volcanoes National Park to hover over Mauna Loa, the largest volcano on Earth, and Kilauea, the most active of the Big Island’s volcanoes. By this time, the sun will have fallen behind the mountains, allowing you to spot the glowing lava more easily and admire the magma lake in Halema'uma'u Crater.

Continue to the southern tip of the Big Island, passing over the black-sand beach of Punalu’u and the green-sand beach of Papakolea, two of Hawaii’s most striking stretches of coastline. Round the tip of the island and head back north along the west coast, flying over Pu’uhonua ‘o Honaunau National Historic Park, which once served as a refuge for ancient Hawaiians who broke a law. As you fly from the park to Kealakekua Bay, a couple of miles north, the sun begins to set, creating quite a show.

Watch the sky turn shades of yellow, orange, red and purple, and keep your eyes peeled for the rare flash of green that appears on the horizon when the conditions are just right. When the sky finally turns dark, return to the airport, from where you’ll be transferred back to your hotel.

Flight time is approximately two hours; total duration is approximately three hours including the check-in and pre-departure process.
